Cauliflower Breakfast Risotto


Waaay back in 2011, I posted this breakfast risotto recipe.  Filled with rice, breakfast sausage, and Parmesan cheese, it's a hearty one-pot breakfast and is a delicious way to start the day.  Fast-forward nearly 8 years later, and I'm eating considerably fewer carbs - I'm not on any sort of keto or low-carb diet, but if I can sub in a vegetable where there wouldn't otherwise be one, I'm game.  Since I've been playing around with cauliflower rice lately, I wondered if I could turn it into something resembling risotto.
